asparagus, enoki mushrooms, leek and noodles

Simple cooking, that anyone can muster. 
Tip "Always use Fresh ingredients and taste as you go."

Boil a pot of water, add some flat rice noodles, about 10 mins of cooking.
while noodles bubble away - 

Heat a pan (hot), drizzle a little rice bran oil. slice up find some leek and add to pan, lightly stir and turn.
Once the oil is coating the leeks, cut up asparagus, each strand into 2-3 pieces, add to pan.
Drizzle some sesame seed oil and add some fresh chilli to taste if you like heat.
Finally add enoki mushrooms (or any finley sliced mushrooms will do) and coat with a little rice bran oil. lower heat and when the leeks have started to become a little clear and the mushrooms have been well sauted - simplly drain the noodles serve into a nice plate and top with the ingredients in the pan.
All up about 20 minutes including the time taken to go to the garden or fridge and get the vegies.
Enjoy this is one of my personal favourites.

I love mushrooms. They are the best thing to ever happen with vegans after tofu skin. Tofu skin tastes like beef strips in salt and pepper. Oyster mushrooms taste a lot like chicken skin. Again, it's the best thing in the world. Imagine having everything in the world without having to kill for it. Funny I initially thought "without having to kill people for it." I am trying to make a sense out of it and I think it makes a lot even in the absence of effort from me. I think the world can survive on mushrooms alone. Do you agree?
