Spicy soup with sweet Potato noodles, spring onions, mushrooms and sesame

When i realised how easy it is to cook amazing spicy noodles at home, i started to save a bunch and eat healthier from ingredients in our own backyard.
Spring onions and Leeks are some of the easiest vegetables to grow. simply put in a pot with soil and water, in a few weeks you will be dining from your garden ingredients.

This is so perfect for the cold weather. I prefer having light meals and soups during winter because I always feel bloated and feels like I am always sick. I really do not like spring onions before because it smells so bad but when my mom cooked this soup for me, I really started to like it. They are good for coughs and colds, too. I really appreciate the posts of Vegan Dad, it is always about having a good, delicious yet healthy foods.

People have this wrong notion that you can never have anything tasty to eat when you switch to a vegan diet but once they tried it, they are sure in for a pleasant surprise. An abundance of herbs is not something you see everyday from your usual American diet of burgers, steaks and fried chicken. The best chef's are those that can make anything bland taste great and meat is supposed to be bland. It's not really the one giving flavour to every meal but the way it's prepared. You can transform anything vegan into something greater than anything acquired thru cruelty.
