HOKKIEN w/ charred corn and asparagus

Tastes better than it looks, but i guess you have heard that all before.

Fresh hokkien noodles
Teriyaki sauce
Baby corn
asparagus
sesame oil

It's a simply stir fry, drizzle of oil, add sliced corn and asparagus. Once seared and started to soften, add the hokkien and an average drizzle of teriyaki sauce. 

When it all looks done dress with a tiny splash of sesame oil.

The simplicity of this dish is perfect for me.
Pho based veggie soup, soft fresh udon noodles and bok choy that melts in my mouth.

All this topped with some sauteed fresh garlic. Delish noodles to slurp.

roast cauliflower with garlic, rosemary and lemon

Roasted Cauliflower in the oven is a devine treat and so easy to make.
40-45 minute in the oven. You need to break it into small pieces just bigger than bite sized.
For the first 30 mins its that simple.

At 20 minutes out boil some pasta, spaghetti was our choice.
10 mins left to bake. bring the cauliflower out and add salt, pepper, garlic and rosemary and drizzle with virgin olive oil. Back in the oven for 10 minutes. 

5 mins til the bake is done, check the pasta is al dente, left the pasta out of the water and let drain, add salt pepper.

When the roasted cauliflower starts to golden and char, its done, pull it out cover the cauliflower with the pasta and drizzle with fresh lemon. Serve at the table from the roasting bowl.

This dish can also be boosted by a side of roasted tomatoes.

Riceless risotto - barley, peas, corn and mushrooms

I've never connected to risotto.

The gluggy rice, usually too much moisture and little flavours to boot.

This was an experiment that turned out surprisingly well, and it was super easy. 

Boil barley for 10-15 mins add in steam veggies and saute mushrooms, spice to your taste.

In this is a combination of white pepper and himalayan salt. Simple yet hearty and delicious. and no gluggy rice.

Avocado and pear salad w/ lime juice

An all time favourite
Only four ingredients - 
1 Avocado
1 Ripe juicy pear
Baby spinach leaves
1 fresh lemon or lime, just for the juice.

This is a complex dish, (not)
Add baby spinach to a bowl.
Cut pear into segments
​spoon small portions of avocado into the salad.
Squeeze lemon or lime juice.

I like it with salt and pepper too but its not mandatory.
Enjoy - this is delish and quick for friends, family and children.

It is great to explore new fillings in dumplings.
How about these kimchi style korean dumplings for an afternoon snack. Down them with a good beer or glass of semillon.

Once the pastry is made simply wrap type and sear on a dry hot pan with a little sesame oil. add your own personal garnish.

Simple Dishes done well

That's our rule.
Sometimes we even deliver.

Everyone has a favourite Italian red pasta sauce. the usual ingredients.
Pasta, tomatoes, basil, garlic, onion, maybe some garden greens.
But, have you ever wondered what makes a red pasta sauce really go next level. Try a great quality virgin olive oil and our secret ingredient herb,
Lemon Thyme.
Try it and it will blow you away.

Simple stir fry

Fresh flat rice noodles
Mushrooms of your choice
Baby corn
Dark soy
Garnishes - 
Ginger, Garlic, Coriander
Spring onions

Heat the wok.
Drizzle the oil,
cut and add the baby corn,
then soy, garlic and ginger.
Add your mushies and fresh flat rice noodles, mix while cooking, takes 2-3 mins. Serve Hot.

spinach w/ mushrooms, garlic and chilli

Fire Breathing Mushrooms and Spinach

This dish is simple fast and packs a punch. Add as much chilli as you can handle. 
Start with a heated pan.
Saute the oysters in a plan with a drizzle of oil, soy sauce and garlic.

In another pan, add about 1/2 cam water the bottom, bring to heat and add in the stem of the spinach (not the leaves) as they soften add in soy and freshly chopped chilli.

Lower the heat on the mushrooms, and add the spinach leaves to the spinach stems, drizzle sesame seed oil over the spinach just a little as sesame oil has quite a punch re flavour. It makes the spinach sing!!

Once the spinach if soft and reduced add it to the oyster pan, mix and raise the heat to high for the last minute of cooking.

Finally serve adding fresh friend garlic and spring onions for garnish.


​All up this is a cook which will be less than 5 mins, unless you are using thick stemmed spinach or asian greens instead.

Roast fennel and veggie bowl

Our motto is the simplest food is the best.

Quick simple and easy to prepare, and delicious to taste.

​This vegie bowl and roasted fennel is a perfect example.

Rinse and slice a fennel into pieces around 1cm thick, place in a baking tray lined with foil or baking paper.

Bake for 40 minutes, at the 35 minute mark, drizzle some virgin olive oil and freshly diced garlic into the pan.

20 minutes into the bake start steaming some veggies, we have used green peas and asparagus.

If you don't have a steamer head to "Our Store" and check out the Optimum Thermocook.
Its amazeballs and I would be without it. It steams veggies on a timer, ste and forget. once complete plate up and add some dried shallots and freshed seared garlic. 
The fennel will be done simply plate it up and drizzle tiny bit virgin olive oil, salt and pepper on everything for taste and WALLA a meal as easy as u like healthy and packed with flavour.
By the way for extra flavour fresh mint and peas is delicious.

spicy sweet potato noodles w/ garden greens

This is a regular go to for a home lunch.
How to - 6 easy steps.
1. Boil sweet potato noodles for 10-15 mins until supple.
while boiling create a the soup, in a wok.
2. Start with a dash or rice bran oil, chopped onions, dash of fresh garlic. as it rises to the heat boil some water, add some vege stock to the water, with spinach stems (not the leaf yet), add some soy dark or light depending your flavour palette both work.
3. Once the stems have softened we are going to blend the noodles with the soup. the key is the balance the cooking time so the noodles anf the stems are perfect at the same time.
4. When both perfect, drain the noodles. Grab your serving bowl, in the bottom of the serving bowl add a dash of sesame oil and some fresh chilli, add the noodles and let rest.

5. Turn up the heat in the soup and add the spinach or green leaves (what you choose). Once the leaves reduce pour/add the soup over the top of the noodles to about 75%.
​6. Garnish the top with fresh pan fried garlic, shallots and as much chilli as you can handle.
then dig in.

banana bread vegan home made style

Ingredients
3 big bananas - soft and ripe
Plain flour - 225 grams
Brown sugar - 100 grams
Baking powder - 3-4 tsp
Oil - 75ml, vegetable oil, sunflower or even rice bran oil.
Additional spices can be added at your preference, like cinnamon, or even a little ginger works well.

1. Heat Oven 180-200C
2. Mash bananas, mix with 75ml oil and 100 gram brown sugar
3. Mix in the flour, baking powder and any other spices
4. Bake in a tin which is oiled or lined with baking paper and check regularly
5. when a skewer comes out clean and the cake is golden brown - Congrats it's cooked.
6. let it stand and cool - though a nice warm piece is extra tasty, and tomorrow it will be even more delish.

garlic butter mushrooms - vegan style

Going vegan is definitely not about losing flavour. Learning how to adapt and then appreciate the goodness in great healthy food - well sometimes we squeeze in a little buttery goodness, thanks to the vegan butters on the market. This juicy mushrooms slow roasted with Nuttelex butter, garlic and a dash of rosemary. the spinach was tasty too but more there for the visual balance.
