Chips - Sweet Potato, Potato and kale

Oven at 160 for the first 40 mins then crank it to 210 for the last ten minutes.
add rosemary and olive oil at the crank up phase.
To get amazing potato chip boil the potatoes in water and a little white vinegar. The vinegar lets you twice cook the chips and they will hold their structure even though the inside will be soft, the outside beautiful and crunchy. add salt when serving.
