Mushrooms, spinach and red hot chilli

Simple spring lunchtime meal
In a steamer - steam some fresh green spinach for 5 minutes and let stand while we cook the mushrooms.
Use a non-stick pan, drizzle some light rice bran oil, bring to hear before adding a sprinkling of freshly cut brown onion, crushed garlic and fresh chilli
Let the oil soak to these ingredients and then add mushrooms and another small dash of oil to your preference.
Once the mushrooms brown simply serve on a plate side by side the mushrooms and spinach.
Enjoy with a cup of green or peppermint tea, or maybe even a glass of chilled chardonnay or pinot.
